Polly Picked a Pepper. A Pepperless stuffed Pepper.

It was 5 o’clock and, as usual, no plan for dinner. My baby baby was sleeping and I knew he would be waking up within the next 20 minutes so I gave my fridge a once over and decided on none other than pepperless stuffed peppers (without the peppers, that is). I LOVE stuffed peppers, but they aren’t easy to eat, especially for kids, so why not just make the inside stuff? Plus, I had no peppers in my fridge today.  I have simple goals when it comes to dinner:

1. Healthy

2. Easy

This recipe is both of those things and only two dishes to clean to boot. If it is actually, good, then BONUS! This one is good. Promise. It’s okay to read on.

Ingredients:

1 pound turkey sausage (removed from casing or buy loose)

1 half yellow onion chopped

6-7 baby bella mushrooms chopped

one head of broccoli chopped and steamed

one bag of Trader Joe’s Organic Brown Rice (comes frozen, follow directions to heat), hey, like I said, I only had 20 minutes.

one can of tomato soup (I used Amy’s organic)

shredded cheese for garnish

My method:

Sauté sausage until cooked. I did it over med-high heat.  Remove sausage from skillet. I used a cast iron skillet (obessessed!!)  so I wiped it out, added a little olive oil butter and sautéed onion and mushroom for a few minutes until onion was translucent. Meanwhile steam broccoli for a few minutes and chop into bite-size pieces. Once strained and cooked, add broccoli, onion mushroom mixture, and sausage to pan. Add rice (after heating  according to directions).

Pour can of tomato soup over all ingredients. Stir. Cook over low heat until heated through. DSC_0061

Sprinkle a little (or a lot) of shredded cheese and serve. DSC_0065

Ok, now keep in mind this recipe is something I created in my head and I am BY NO MEANS a chef, but it is seriously good. My 4 year old has two ratings for my dinners as follows:

1. Mom make this dinner again.

or

2. Mom don’t EVER make this dinner again.

This dinner is a “make this dinner again” dinner. So, try it! Maybe you’ll like it. What are your “Mom make this dinner again” dishes? I’d love to hear what dinners your making in order to avoid meals that trigger gag reflexes, slipping to the dog, “accidentally” spilling on the floor. You know, those dinners.

    Thank looks great, AND it’s gluten free (if I make it with #gf sausage) so I think I’ll give it a try!

    I’m not a Huge fan of stuffed peppers either but I love the filling! these look good

    Looks delicious! Easy to make GF, I think…just sub beef, lol! Yum, adding to my recipes.

    This is PERFECT… for my husband! He loooves stuffed “peppers” and always asks for them… but then he always discards the pepper… what a waste! And easy is the best kind of dinner 🙂 Thanks for sharing.
