Quickie Meals – A weekly plan.

January 19, 2015

I can already tell that I am going to be happy I planned some quickie meals for this upcoming week. I’m feeling two steps behind and am already a day late with this post… sorry! Try some out or pin the image below for those weeks when you’re feeling overwhelmed, grasping for air, and the last thing you feel like dealing with is dinner. It’s okay. That’s me every night too.

quickie meals

Cooking Classy’s Chicken Tortellini Soup – It’s not cheating by using rotisserie chicken, people. It’s genius. Want to make this even more time-saving, take Making Lemonade’s advice and buy pre-cut veggies.

Premeditated Leftover’s Ham and Asparagus Frittata – Because I always forget about having breakfast for dinner and that needs to change. How easy and delicious does this sound?

Girl Gone Mom’s Chicken Lettuce Wraps – These sound super easy and I love me a one-pot meal. I’m thinking that my 20 month old will have trouble getting the wrap from plate to mouth in one piece, so I may add some brown rice to his portion and serve it to him in a bowl instead?

Ellie Krieger’s BLT with Avocado Spread – This dish screams Thursday night!…. Fun, casual, EASY dinner to lead you into the weekend.

The rest of the week is up to you! If you need more inspiration you can check out my recipe index here or follow me on Pinterest… because besides cute clothes and activities I will probably never do with my kids, I pin things that make my mouth water.

Oh, and stay tuned because my sister, formerly known as Little Mrs. Bossy, is going to start contributing her culinary expertise with you all! Her blog hasn’t been updated in 2 years, but a good recipe is a good recipe. Amiright?
