You guys. I’m psyched to introduce to you my sister, Liz. Otherwise known as Little Miss Bossy. She has 4 kids so I guess when you have that many offspring, you have no choice but to be a little, shall we say, “pushy”. Regardless, she does have moments of tenderness (love ya, Liz) and is an insanely good cook. Homemade beet pasta is a normal Tuesday night dinner for her family – I will never understand how she does it?? Liz has agreed to share some of her self-taught culinary expertise on the blog and she is starting with an easy family favorite – we will save the homemade pasta for another day;)
This recipe goes way back to, oh say, the 1950s when my dad was a kid. Here is the backstory: Once upon a time my grandmother made this dinner for her two sons. There was little to no reaction as can be expected from boys. Unless it’s really bad, you’re probably not going to get much feedback. A week passed and my dad asked, “Hey mom, can you make that dinner you made last week?”
“Which dinner?” she asked.
“You know. That concoction you made last week.”
Ahh. The concoction. So the name stuck and it is still being “concocted” decades later for her SEVENTEEN great-grandchildren. Did I mention she only has 2 sons and somehow has 17 great-grandchildren. Born in 1920, she is still only 39 years young. Nana, this post is for you and all the wonderful things that you are!
So here it is:
Easy weeknight casserole, a.k.a.:
- 3 stalks celery, chopped
- 1 small onion, diced
- 1 pound sausage
- 1 cup milk
- 1 1/2 cups cream of tomato soup
- 1 bag egg noodles
- 1 cup cheddar cheese, shredded
- Remove casing from sausage and brown in saute pan.
- Lower heat to med-low and add onions and celery and cook until soft (5-10 minutes) Do not let onions brown. Set aside.
- Cook noodles according to package, drain and then pour into 13 x 9 baking dish.
- Top with sausage mixture.
- Add milk and soup and stir to combine all ingredeints.
- Top with cheese and bake for 30 minutes at 350.
So yeah. It’s just an easy weeknight casserole, but it might be one of my all time favorites.
