What I Wore This Week (and what I made for dinner)

What a week! I’m sitting here trying to break up fights, explain that perpendicular lines are not that confusing, assign my preschooler work bc he feels left out that he doesn’t have homework (why?), and it’s taken me 32 minutes to write this non-sentence. Homeschooling and working do not mix and even though I know that, part of me just wants to do my own thing and not have to spend my mornings battling school work. If anyone else is struggling with this, I’m right there with you.

To take one thing off your plate, this post is all about sharing at-home clothes that will make you feel great. I’ve also got something to add to your plate, but don’t worry it’s all tasty and went over well with my crew. I included this week’s menu for each day. Everything is generally healthy and easy to make. And with that, happy Friday gang!


What I wore:

Tee (comes in a 2 pack) | Joggers (less expensive pair here) | Sneakers

What we ate for dinner: Skillet Pork Chops (recipe here), and roasted sweet potatoes.

What we ate for dinner: Chicken Sweet Potato, Quinoa Casserole

1 pound chicken breast cubed

3 small sweet potatoes cubed

1.5 cups quinoa (I used the kind that comes in packs and is pre-cooked)

Half cup shredded cheese

1 cup chicken broth

1 cup spinach


Roast sweet potatoes in oven with olive oil and salt pepper (425 for about 20 mins)

Meanwhile, season chicken with salt/pepper then cook chicken in a skillet in olive oil.

Once chicken is mostly cooked, add quinoa and chicken broth.

Add spinach and stir until wilted.

When sweet potatoes are soft, add them to the chicken and stir.

Top with cheese and serve once cheese is melted.

What we ate for dinner: Turkey Spinach Cheddar Meatloaf

2 pounds ground turkey

3 stalks celery

half yellow onion

2 cups fresh spinach

3 cloves garlic

1 cup bread crumbs (I used gluten free or panko)

1 cup shredded cheese (I used sharp cheddar)

2 eggs

Salt/pepper/oregano (few dashes of each)


Heat oven to 350.

Dice onion and celery and sauté in olive oil in a skillet. Once soft, add garlic and spinach and cook one more minute until wilted then remove from heat.

In a bowl, combine eggs, bread crumbs, ground turkey meat, salt/pepper oregano then add the sautéd vegetables.

Combine the mixture, form into a loaf and put into a casserole dish. Coat the top with ketchup if desired. Or write a random word 💁🏽‍♀️.

Cook in the oven, uncovered for about an hour or until cooked through.

Serve hot! As a side dish I served Dr. Praeger’s Broccoli Bites.
