Cookie Dough Energy Balls (Gluten-Free)

I can’t tell you the number of times I open my pantry, look around, and decide I have nothing to eat. Sort of the same as staring into your closet and having nothing to wear. Okay, okay, I don’t have that problem, but the pantry problem is a real thing. Being gluten-free means I can’t eat many of my kids snacks (I’m talking you, Oreos. And you, too, Goldfish). Sometimes I just want a little sweet treat that’s semi-healthy. Is that too much to ask? I’ve made energy balls in the past, but recently discovered that I can make them completely gluten-free by using coconut flour and gluten-free oats. And as a cookie dough lover, these are a second close without the guilt (or raw egg)!

These cookie dough energy balls are also high in fiber and omegas with the addition of chia, hemp, and flax seeds. And don’t forget the almond butter for that dose of protein. You can whip these up in a few minutes and eat them right away or refrigerate for up to a week. Recipe adapted from this one.

1/2 cup almond butter

1/4 cup maple syrup

1/4 cup gluten free oats

1/4 cup coconut flour

3 tbsp flax seed (ground)

1 tbsp chia seeds

2 tbsp hemp seeds

1/4 cup chocolate chips

pinch of sea salt

Combine all ingredients and form into a mixture. Roll into small balls and roll in hemp seeds or shredded coconut to coat. Store in refrigerator.
